Shrimp Scampi

This garlicky shrimp is just as good solo as it is on a salad or pasta.

There are few marriages as good as shrimp and garlic. You can top pretty much anything with this succulent seafood, but let’s be honest, you’ll probably devour these before you get the chance to do that. Ingredients
2 tbsp.

canola oil

1 1/2 lb.

peeled and deveined jumbo or colossal shrimp (about 16)

Kosher salt 

2 tbsp.

unsalted butter, cut into pieces, divided

2

large cloves garlic, finely grated

1/2 tsp.

red pepper flakes

3/4 c.

dry white wine

2

dashes hot sauce (we used Tabasco)

2

dashes Worcestershire sauce

1/2 c.

flat-leaf parsley leaves, chopped

1 tsp.

grated lemon zest

3 tbsp.

lemon juice

crusty bread

Directions
  1. Heat oil in a large skillet on medium. Season shrimp with 1/2 tsp. salt. Once skillet begins to smoke slightly, remove from heat and arrange shrimp in a single layer. Return to high heat and cook, scattering 1 tbsp. butter around shrimp in pan (this will add flavor as they brown), until browned, 1 to 2 minutes.
  2. Flip and brown 1 to 2 minutes more (the goal is not to fully cook the shrimp but to brown the exterior and develop flavor). Transfer shrimp to a baking sheet.
  3. Return skillet to medium heat and add remaining tbsp. butter along with garlic, red pepper flakes, and a pinch of salt. Add wine and simmer, stirring 3 minutes.
  4. Reduce heat to low, arrange shrimp in sauce, and cook, spooning sauce over shrimp, until nearly opaque throughout, 2 to 3 minutes more. Stir in hot sauce, Worcestershire sauce, parsley, lemon zest, and lemon juice. Season with additional salt if necessary and serve with crusty bread if desired.
